Healthy Chicken Salad
Ingredients:
- chicken cooked - 3 cup(s)
- celery stalks(diced) - 2 whole
- red grapes(halved) - 1 cup(s)
- almonds(thinly sliced) - 1/2 cup(s)
- green onions(sliced) - 3 whole
- parsley(chopped) - 2 tablespoon(s)
- greek yogurt - 3/4 cup(s)
- dijon mustard - 1 tablespoon(s)
- lemon juice - 3 tablespoon(s)
- celery seed - 1/2 teaspoon(s)
- salt - 1 teaspoon(s)
- pepper - 1/2 teaspoon(s)
Directions:
1. In a large bowl, mix together chicken, celery, grapes, almonds, green onions and parsley.
2. In a separate bowl, whisk together Greek yogurt, dijon mustard, lemon juice, celery seed and salt/pepper. Drizzle the dressing all over the chicken mixture and mix well until all combined.
3. Cover and store in the refrigerator until ready to enjoy. Serve with crackers, on slices of bread or in a wrap, or serve on lettuce as a salad.
